Ingredients

200g mashed potatoes (no butter or anything added)

200g grated raw beetroot

150g feta

50g chopped mint

100g flour

3 beaten eggs

200g brioche breadcrumbs

Sauce:

250g sour cream

100g yoghurt

tsp chilli flakes

1 grated cucumber

lots of chopped mint

juice and zest 1 lime

Method

1. Mix the beets, spuds, feta and mint. Season well. Roll into 80g balls. Press to form a patty.

2. Roll in flour, egg, crumbs then shallow or deep fry for 6-8mins.

3. Sauce – mix it all together.

4. Serve.
