Serves 4-6



1kg minced beef

140g fine breadcrumbs

clove garlic

small handful chopped parsley

2 tbs harissa paste

1 tbs sumac

splash rose water

juice n zest 2 lemons

small handful of chopped mint

1 tsp ground cinnamon

2 yolks


75g cooked bulgar wheat

Small handful each of chopped parsley and mint

200g chopped tomatoes, deseeded

3 chopped spring onions

1 diced cucumber

juice and zest 1 lemon

75ml extra virgin olive oil


1. Koftas – mix it all together, season well, roll into balls.

2. Wet your hands and press each ball around a metal skewer to form a ‘sausage’ about 100-120mm long

3. Chill 20 minutes. Brush with a little oil and grill for 8 minutes, turning occasionally

4. Tabouleh – simply mix it all together and season well

5. Serve with flatbread and yoghurt and a few pickled chillies
