Ingredients

For the rub

15g fine ground quality coffee (Illy etc)

2 tsp smoked paprika

25g soft dark brown sugar

salt

20g cracked black pepper

1 tsp chilli flakes

10g mustard powder

250g fillet of beef

10g rub above

oil to fry

20g butter

clove garlic

sprig thyme

sprig rosemary

2 thinly sliced shallots

15g flour

oil to fry

30g aged parmesan

few rocket leaves

Dressing

15g mustard

juice half lemon

15g cider vinegar

120g olive oil

2 sprigs finely chopped tarragon

salt & pepper

Method

Rub – mix together

Seal the beef on one side for 1 minute

Turn to the next side

Add the butter, garlic and herbs and keep turning until nice and dark on all sides, remove

Wrap in cling film and cool/chill completely

Dressing – whisk it all together

When the beef is cold, cut into thin slices

Lay each slice between cling film and bash out till very thin

Arrange on a plate, top with shallots, dressing and shaved parmesan
