For the cookies (makes about 36)

100g soft dark brown sugar

100g granulated sugar

125g butter

100g crunchy peanut butter

5ml vanilla

1 egg

85g rolled oats

60g flour

2g baking powder

3g bicarb

5g ground cinnamon

pinch sea salt

For the pudding

500ml whole milk

100g sugar

30g flour

3 yolks

60g butter

5ml vanilla

4 bananas

juice half lemon

150ml whipped cream mixed with 20g honey


1. To make the cookies, cream together the butter, sugars and vanilla

2. Add peanut butter and egg

3. Combine the dry ingredients in a separate bowl, then mix in the wet ingredients

4. Put heaped tablespoons of the dough on a lined tray, approximately 50mm apart

5. Bake at 180°C for about 12-15 minutes until the dough is set. Set aside to cool.

6. Repeat until all the mix is used

7. To make the puddings, heat the milk, sugar, flour and egg for about 6 minutes until smooth and thickened

8. Stir in the butter and vanilla then take off heat

9. Mix the bananas (sliced) and lemon, then add to the cooled pud

10. To assemble, break some cookie into large chucks, put in the bottom of a glass or kilner jar

11. Add half the pudding mix, then biscuits then pudding

12. Now add whipped cream, finish with cookies

13. Serve
