125g butter

175g soft light brown sugar

1 tsp vanilla pod paste

2 eggs

2 mashed over ripe bananas

150g crunchy peanut butter

225g flour

1 tsp baking powder

1 tsp bicarb

1 tsp cinnamon

1 tsp maple syrup

For the frosting

350g cream cheese

75g finely chopped mango

550g icing sugar

1 tsp vanilla pod paste

serve with fruit and ice cream


1. Beat butter and sugar for 6mins

2. Add eggs

3. Then banana and peanut butter

4. Then flour, baking powder, bicarb, cinnamon and maple syrup

5. Spoon into 2 x 20cm cake tins. Bake at 180°c for 30 minutes

6. Cool

7. To make the icing, beat the butter and sugar together, then mix in the cream cheese and then mango. Spoon onto the cakes

8. Serve with fruit and ice cream
