150g melted butter

2 peeled grated apples (sharp like a granny smith works well)

175g soft dark brown sugar

2 eggs

225g self-raising flour

10g baking powder

10g cinnamon

5g nutmeg

1 vanilla pod

75g chopped pecans

zest 1 lemon

For the sauce

125ml pure maple syrup

30g butter

serve with pecans, soft fruits and cream


1. Put the butter, apple, sugar, eggs, flour, baking powder, cinnamon, vanilla, nutmeg, pecans and lemon into a bowl. Mix well

2. Spoon into a greased lined 20cm spring form tin

3. Bake at 180°c for 50-55mins

4. To make the butter, heat the maple and butter together until combined. The poke some holes in the cake with a skewer and pour the butter over the warm cake
