750g British apples, peeled and chopped

5g ground cinnamon

100g ground almonds

100g chopped medjool dates

zest 1 lemon

100g sugar

6 sheets filo

100g melted butter

Icing sugar to garnish

Serve with ice cream or coconut yoghurt


1. Toss the apples together with the other filling ingredients

2. Lay a sheet of filo on a board, brush with butter, overlap with another, repeat

3. Spoon the mix along the longer length of the pastry, leaving a gap

4. Roll in to a ‘strudel’ shape (seem side down)

5. Brush with more butter

6. Cook at 180°C for 35-45 minutes

7. Serve with accompaniments
