Ingredients

Base

150g self raising flour

50g desiccated coconut

100g light brown sugar

150g melted butter

Topping

75g melted butter

75g coconut shavings

90g porridge oats

115g syrup

1 tin dulche de leche

Serve with 200g mascarpone beaten with vanilla and 50g dulche de leche

Method

Mix the flour, desiccated coconut, sugar and butter until it looks like damp breadcrumbs

Press into a 20 x 20cm line tray. Bake at 180c for 15 - 20 minutes until golden brown. Cool.

Spread on the dulche de leche

Mix the topping ingredients, the butter with the shaved coconut, oats and syrup, spoon onto the leche

Bake for another 15 - 20 minutes

Cool, serve
