Vicky's Puff Puffs in the pan

Get a genuine taste of life in the Adesina household with Vicky's recipe for delicious Nigerian Puff Puff doughnuts.

Ingredients

  • 1.5kgs flour
  • 0.5kg sugar
  • 5 tsp yeast
  • 1 tsp salt
  • 2 tsp vanilla essence
  • 1 tsp nutmeg
  • 2 ¼ pints of water
  • Vegetable oil

Method

  1. Measure 1.5 kilos of flour and half a kilo of sugar. Place together in a mixing bowl and add five teaspoons of yeast and one teaspoon of salt. Add two teaspoons of vanilla essence and one teaspoon of nutmeg. Carefully add the water to the mixture either with a whisk or in an electric mixer. Mix until it has a soft consistency.
  2. Cover the bowl with cling film and leave to rise for 3-4 hours in a warm place.
  3. Once ready, shape the mixture into golf ball sized pieces in your hands. The mixture will still be sticky at this stage.
  4. Heat the vegetable oil in a deep pan (you will need enough oil to cover the puff puffs so that they float whilst frying - approx 3 inches deep).
  5. Carefully place the balls into the hot vegetable oil using a spoon and fry for 2-3 minutes, until light golden brown.
  6. When they're ready, remove them with a spoon, allow to dry on a paper towel then enjoy!
