To make Sunny's favourite pakoras you will need:
- Half a pound of boneless chicken
- 5/6 Spring onions
- Green chillies (as desired)
- Fresh Coriander
- Gram flour
- Plain yoghurt
- Cooking oil
Method:
- Start off by chopping the onions, chillies, and a handful of coriander into fine pieces. Alternatively you can grind them in a food processor, but they must not be too fine.
- Cut the boneless chicken into very small pieces and then with the finely chopped opions, chillies, coriander along with 1 tablespoon of salt (as you require) mix this together.
- Add 1 cup of gram flour and 4 tablespoons of yoghurt to the mix and slowly, with your clean hands, mix all together allowing all the flavours to marinate. If the chicken is dry slightly and is not covered with the gram flour, add a handful more of gram flour and 2 more tablespoons of yoghurt.
- You must allow the mixture to marinate and ensure it is all mixed properly. Allow to set for 2/3 minutes.
- The pakoras must be deep fried and the cooking oil must be very hot so ensure that there are no children in the kitchen!! Once the oil is hot put the gas to medium heat and then add little cutlets of the mixture into the oil. DO NOT create little meat balls out of the mixture you can simply pick small handfuls of the mixture and put slowly into the oil.
- Allow to fry and turn slightly and remove from the oil once golden brown.
Sunny's favourite pakoras can be served with coriander chutney.
