In episode 5 of My Dream Farm, Talitha paid a visit to local preserve-maker Miranda James, who demonstrated how to make her mango and ginger chutney. In response to feedback from viewers who told us they were keen to make the chutney themselves, we've published Miranda's recipe here.
To make Miranda's mango and ginger chutney You will need:
- 7/8 under-ripe mangos (4.2kg)
- 340g raisins or sultanas
- 2/3 tablespoons grated ginger
- 2 teaspoons sea salt
- 4 cloves crushed garlic
- Some chilli to taste (can be fresh or dried)
- 375ml brown vinegar
- 1kg granulated sugar
Instructions:
- Chop your mangos coarsely, leaving the skin on
- Place all your ingredients into a large, heavy saucepan
- Bring the mixture to the boil, stirring occassionally, then simmer for 20 mins
- Allow to cool
You're then ready to bottle the chutney - make sure your jars are sterilised (you can do this using your hottest dishwasher settting) and make sure any air holes left when pouring the mixture into the jars are prodded away.
