Lowdown: Fraser grew up in the South Cotswold, and always enjoyed the countryside as a young boy. After leaving school he went to catering college, where he learned about about the healing properties of herbs as well as cookery, and this is what started his foraging interest. He has hosted and contributed to fish events and courses at River Cottage and now runs coastal survival and wild food foraging courses.

Roger Welberry

Location: Lincolnshire
Lowdown: Proud sprout farmer and chairman of the British Sprout Grower's Association Roger Welberry has been farming sprouts for over fifty years.
Roger has always been keen to experiment with new varieties and grows 500 acres of sprouts at his 2,500-acre vegetable farm near Boston in Lincolnshire.
Thursday 25th December
Paul and Sue Brownrigg
Job: Poultry farmers
Location: Isle of Wight
Lowdown: Paul and Sue run a poultry farm with their two sons John and Richard. They farm free-range chickens, ducks and eggs throughout the year, and at Christmas they produce fantastic turkeys, geese and game.
Brownrigg Poultry's award-winning traditionally reared white and bronze turkeys are grown naturally and slowly to full maturity. They are free to roam in grassy paddocks and fields around the farm, enjoying a completely natural diet of cereals and vegetable protein.

Friday 16th December
Karol Bailey
Job: Poultry farmer
Location: Cheshire
Lowdown: Karol has won numerous awards from the National Farmer's Union including female farmer of the year 1999 and the president's special award.
For Holly Tree Farm, animal welfare is paramount and Karol attributes the meat's 'old fashioned flavour' to free-range conditions and the geese grazing on the sweet nutty Cheshire grass.
