It's Jack's birthday, and he's staggered when he opens the door of his Newport home and finds Dave Berry on the doorstep, with a ticket to Kerala. Jack's going to find out the truth about what goes into an authentic curry.

Everything's very different in Kerala from how it is back home. Jack meets his mentor Francis, an expert curry chef, who takes him off to the grocery store for a crash course in spices.

Now for the main ingredient – a chicken. One minute it's flapping around in the butcher's chicken run, the next – it's dead meat. Jack can't quite get over it.

At his beach house, Francis makes a delicious curry and Jack's inspired. He wants to prove to Francis that he's a good cook, despite his history in the kitchen.

It's day two, and Jack gets his feet wet and muddy whilst helping out in the paddy fields. He joins in with a sing-song with the women rice-pickers, and leaves them laughing with a high-five.

Uh-oh, what's that smell? Francis takes Jack to a shrimp-peeling shed, but the smell's overpowering, and Jack can't bring himself to de-shell a shrimp. Ace cook Francis bets Jack that he'll not only eat fish curry, he'll actually enjoy it.

On board a picturesque Keralan bamboo houseboat, Francis demonstrates how to cook a fish curry with spices and coconut milk. Jack samples it… and yes, it's good! To celebrate winning his bet, Francis calls in the Indian dancers.
16:55 – 20:16
It's day three, 5am, and Jack's about to sail into the dawn with the Keralan fishermen. He joins in with the traditional fishing methods, ending by leaping into the warm sea and feeling the fish tickle his legs. Jack's changed his ideas about fish since coming to Kerala.
20:17 – 23:15
Back on the beach, Jack has 30 minutes to prepare a fish curry for Francis and his guests. He doesn't want to let his mentor down and manages to remember the steps in the recipe. Francis gives him 10 out of 10, and Jack knows he'll go home much wiser about the care and work that go into producing a real curry.
23:16 – 24:00
Dave goes round to Jack's house to sample a proper curry. Verdict? The world's best.
