Dave Berry tracks down 19-year-old Jamie in a Sheffield kebab house, where he's a nightly customer. Although Jamie comes from a family of chefs, he's never cooked a kebab, and he's bowled over when Dave sends him off to Istanbul to find out exactly how it's done.

Jamie lands in Istanbul and takes a ferry across the Bosphorus to meet his host, Oguzhan Iskenderoglu – Oz – a descendant of the man who created the very first doner kebab.
04:39 – 07:48
Jamie hits the market, looking for all the lip-licking ingredients he's used to finding in a kebab, especially chilli sauce. He takes his booty back to Oz, but the bad news is that not one of the ingredients he's bought is actually used in a Turkish kebab.

Oz takes Jamie to one of his family's kebab restaurants and proudly shows him the first doner grill in the world, used by his great-grandfather in the 1850s. Chef Mecit Han Iskender teaches Jamie how to prepare the meat, vegetables and dressings for an authentic kebab.

Jamie thinks the kebab is 'gorgeous', even though it's nothing like the doners he buys every night back in Sheffield.

It's day two and Jamie's off to a rather smelly sheep farm. He tries on the shepherd's extraordinary cloak, but the sheep are too fast for him to catch one.

Jamie comes face to face with the harsh side of meat-eating, as he takes 'his' sheep to the abattoir and watches, horrified, as it's slaughtered. He's shaken by the experience.

Kebab-tower-builder extraordinaire, Sedat Vatansever, demonstrates how to turn a pile of meat into a perfect, firm and well-shaped tower. It's not as simple as it looks, as Jamie discovers when it's his turn.
17:43 – 18:51
The next day Jamie goes to the flagship restaurant to cook for Oz, his family and his father, kebab expert Yavuz Idkenderoglu – head of the Iskender Kebab restaurant chain and a man who has kebab-making in his blood.

Oz has a good laugh at Jamie's burnt pitta breads. Things haven't got off to a great start.
20:05 – 22:05
Jamie sets his kebab tower to cook and starts work on the vegetables. Soon he's feeling the pressure – the veg are burning, whilst the tower isn't done yet – but at last it all comes together.

Jamie serves his meal, and waits for the verdict, which is very good! The twelve guests love their doners, so he can relax and feel proud of his efforts.

Back home Jamie shows Dave how a traditional doner should be made. Delicious!
