This Italian sausage and roast vegetable pasta bake is crammed with exciting flavours - perfect for a hungry family after a long day.

Serves 4
Ready in 20 minutes

Ingredients

  • 8 organic pork and herb sausages, cut into chunks
  • 350g jar Sacla Classic Tomato & Roasted Vegetables pasta sauce
  • 350g dried pasta shapes
  • Handful torn fresh basil leaves, plus extra to serve
  • 150g mozzarella ball, drained and diced

Method: How to make sausage pasta bake

1. Heat a frying pan over a medium-high heat. Add the sausages and cook for 4-5 minutes, until browned.

2. Add the pasta sauce, half-fill the jar with water and rinse out into the pan. Simmer for 5 minutes, until the sausages are cooked – it will be quite saucy. Season.

3. Meanwhile, preheat the grill to high. Cook the pasta shapes in a large saucepan of boiling water for 10 minutes or until al dente. Drain and return to the pan.

4. Add the sausage mix and a handful torn fresh basil leaves. Stir, then tip into a large deep ovenproof dish. Dot with mozzarella then grill for 3-4 minutes to melt the cheese. Scatter with basil leaves and serve with garlic bread.

  1. I LOVE this recipe! I've used it before and it comes out lovely. Its a big hit with my boyfriend. It also freezes really well and we defrosted it and had it 2 weeks later :)

  3. Just cooked this for the second time and loved it as much this time as last. All the family enjoyed it and it was so easy to prepare. Couldn't get the sauce locally so just used the Co-op pasta sauce with chilli. Fab!

  4. Joyce, metric *is* the standard ;-) Good recipe - adding eggplants makes it a little healthier.

  6. I am having a little trouble going from metric to standard measurements, but if read enough and make enough of the recipes will probably (hopefully) be able to figure it out. Also, some of the products aren't familiar to me so it may be a local brand--what substitutions can one use. I haven't tried anything as yet, but couldn't believe the time frame, if I cook and eat like this, I could be back in a 12-14 dress size by August 29th--amazing. Are these recipes diabetes friendly or exchangeable as my brother and sister-in-law have come up diabetic and this would give them another way to deal with the disease--loose weight and keep the glucouse level where it should be or not have to worry about it at all if losing weight is the key. Thanks for low cal, healthy eating and foods that look like they will taste good. Can't wait to get started and will be watching your show when it debuts this Monday, May 4th on LMN.
