Pork. It's one of the oldest forms of domesticated livestock, with a culinary history dating back around 7,000 years. Hardly surprising then that this tasty and versatile meat occupies the thoughts and haute cuisine of many of the world's cooks. There's charcuterie, swathes of Chinese dishes and the American South to traverse if pork's your thing, but for our 4Food gallery, we've kept it local, with a nod to the French and Italians.
