Paul Rankin: "This really is a staple for me; typically it's a quick healthy lunch or supper. I sometimes make it with cold rice or pasta instead of potatoes, but really it’s the warm potatoes with the onion and rich tuna which makes it special for me. Enjoy!"

Serves 2

Ingredients

  • 8-12 new potatoes, skin on, sliced into ½ cm slices
  • 1 small shallot or 2 spring onions finely sliced
  • 1 stick of celery cut into ½ cm slices
  • 4 red radishes cut into wedges
  • 12 black olives
  • 1 small heart cos lettuce cut into 1cm slices
  • 2-4 tbsp your favourite Caesar salad dressing (or mayo or salad cream)
  • 1 can tuna, drained and roughly flaked
  • 2 tbsp extra virgin olive oil
  • Malden sea salt
  • Freshly ground black pepper

Method: How to make Paul Rankin's favourite tuna salad

1. Cook the potatoes in salted water and drain. While the potatoes are cooking prepare the salad, vegetables and tuna.

2. While the potatoes are still warm toss with the shallot and the Caesar dressing, divide between 2 plates and top with the remaining salad ingredients, then the tuna, drizzle with the olive oil, sprinkle with the sea salt and freshly ground black pepper.
