
Paul Rankin: "This really is a staple for me; typically it's a quick healthy lunch or supper. I sometimes make it with cold rice or pasta instead of potatoes, but really it’s the warm potatoes with the onion and rich tuna which makes it special for me. Enjoy!"
1. Cook the potatoes in salted water and drain. While the potatoes are cooking prepare the salad, vegetables and tuna.
2. While the potatoes are still warm toss with the shallot and the Caesar dressing, divide between 2 plates and top with the remaining salad ingredients, then the tuna, drizzle with the olive oil, sprinkle with the sea salt and freshly ground black pepper.
