This is a colourful and vibrant dish that makes a great centrepiece. Serve with mashed potato or a simple garden salad. Prosecco is a light, sparkling wine with a fresh clean taste and is perfect for cooking fish in.

Ingredients

  • ½ a bottle of Prosecco
  • A wine glass of water
  • 6 - 8 ripe tomatoes, cut in half
  • A good sized bunch of basil
  • A few sprigs of fresh thyme
  • Some whole garlic cloves
  • A few sprigs of rosemary
  • 1 tbsp of Worcestershire sauce
  • 800g of salmon, cut from the middle of the fish
  • Salt and black pepper

Method: How to make baked salmon with Prosecco and fresh herbs

1. Preheat the oven to 180°C

2. Put all the ingredients except for the fish in a pan with a tight fitting lid, giving the tomatoes a squeeze as you do so to bring out their juices. Bring to the boil.

Tip:

When serving salmon, peel off the skin to show off the beautiful pink flesh.

3. Place the fish on top, cover and place on a shelf in the middle of a hot oven for between 15 - 20 minutes.

4. Taste the juices, season with salt and pepper and serve.
