This amazing vanilla and white chocolate dish is not entirely dairy-free but when it tastes this good it doesn't matter!

Serves 4
Takes 30 minutes to make, plus overnight chilling

11.3g sugar
0.3g salt

Ingredients

  • 500ml soya cream
  • 1 tbsp vanilla bean paste
  • 50g white vanilla chocolate, broken up
  • 3 sheets leaf gelatine

Method: How to make white chocolate pannacotta

1. Heat the soya cream in a pan over a medium heat. When it just begins to boil, reduce the heat and stir in the vanilla paste and chocolate. Whisk until the chocolate has melted, then remove from the heat.

Tip

Buy vanilla paste from the Special Selection at Sainsbury's, or use extract.

2. Soak the gelatine in cold water to soften, then squeeze dry. Put 4 tablespoons of boiling water in a bowl, add the gelatine and stir to melt. Add to the soya cream mixture, mix and pour equal amounts into 4 x 150ml moulds. Chill overnight.

3. Dip the moulds in hot water and invert onto plates. Decorate with fresh berries.

  1. Turned out fine but a little bland. I may have needed to use a little more Vanilla Extract (couldn't find the paste) and perhaps a little Cointreau or perhaps Baileys.

  2. Anna, in answer to your question "vanilla paste is a sweet concentrated vanilla extract that has the vanilla bean seeds included in the mix. It is very useful in cooking when you don't want to add much additional liquid." (http://www.vanilla.com/html/facts-extracts.html) My guess would be that it could be substituted for vanilla essence. Hope that helps.

  3. Why after saying "you CAN get the recipes from the web site" YOU CAN'T I would have loved the recipe for Choc dessert and the starter blue cheese cake it liiked lovely. Thats all thanks JG

  4. The cool and subtle vanilla mixes really well with the strong yet sweet white chocolate. I must say the fresh berries really compliment it well, but I also tried it with frozen berries; a mixture of fresh raspberries, strawberries and blueberries left in the freezer. This makes a perfect treat in the summer sun, rounded off with San Pellegrino, or a delicacy at a mid winter dinner party, served with white coffee.

  6. What is vanilla paste? Can i use fresh vanilla for this recipe? Or maybe a combination with vanilla essence? Any suggestions welcome!
