Thought chocolate truffles couldn't get any better? Try this 100 per cent pure cacao recipe from Willie Harcourt-Cooze and think again.

Makes about 40 truffles

Ingredients

  • 250ml double cream
  • 150g caster sugar
  • 180g cacao, finely grated
  • Cocoa powder, for dusting

Method: How to make truffles

1. Heat the cream and sugar in a small pan until almost boiling.

2. Stir in the cacao, then remove the pan from the heat.

3. Transfer the truffle mixture to a plastic container. Cover and place in the refrigerator until cold and firm.

4. To shape the truffles, scoop a teaspoon of the mixture and roll quickly between your palms. Dust the truffles in cocoa powder and store in the fridge until ready to serve.

  2. I've just made my 2nd batch of these. I find that the mixture seperates when I've added the chocolate. Has anyone else found this? It may be because I used Elmlea double instead of 'proper' double cream. They still taste yummy, but they don't look very nice when the mixture is cooling. Will try rolling them in coconut instead of cocoa powder next time. Also ordered his new cook book, which should arrived tomorrow. Think we'll be having a very chocolatey Easter weekend!

  3. These are the most amazing truffles ever!! They are very easy to make although you do get in a bit of a mess grating the chocolate and rolling the truffles but who cares! A vital tip - i found that if you held a bag of frozen peas for a few seconds inbetween rolling you had slightly more working time to get the truffles into a nice shape. Thank you Willie for this "cant live without" new found indulgence! Oh one more thing - does anyone know how long you can keep these for and if you can freeze them as they make a beautiful gift?

  5. Was wondering if there would be an update on the recipes that were shown the perfect chocolate christmas show as there are lots of recipes missing that would like to be tried by lots of people!
