1. Put all the ingredients for coating the ribs into a small pan along with a pinch of salt. Place over a medium heat and stir occasionally until thick and glossy. Leave to cool slightly.
2. Pour the sauce over the ribs and turn the ribs over and over until coated. Cook the ribs over a medium barbecue for 20–30 minutes, depending on their size, turning them frequently and brushing regularly with the sauce.
