
Willie: "A classic Venezuelan snack, often sold at the side of the road. Quick, filling and tasty, its pancake-style is a big hit with the kids. It can be topped with cheese or ham, syrup or jam. Little or large, savoury or sweet; it’s up to you. I like them with slices of mozzarella or spread with cream cheese."
1. Slice the corn kernels away from the cobs. Put the kernels and the cream into a food processor and blitz to a paste. Add the cacao and give the mixture another quick blitz. Season well with salt and black pepper.
2. Melt the butter in a frying pan over a medium heat. Add spoonfuls of the mixture to the pan and gently flatten into rounds of 5-6cm. Fry for a few minutes, turning over halfway through, until golden on both sides.
