
Willie: "We had so many bananas in Venezuela we hardly knew what to do with them. We were always trying out new recipes – this was one of the best. In Devon, we serve it with double cream."
1. Preheat the oven to 180°C (fan).
2. Place the banana on a small sheet of foil and pull the edges up slightly. Sprinkle with the cacao, sugar, rum and passion fruit juice and put the butter on top.
3. Seal the edges of the foil tightly and bake for 20–25 minutes.
4. Serve at once, straight out of the foil, with some cream or vanilla ice cream spooned on top.
