If you want to combine leftover chicken with spaghetti, this is the perfect dish

Serves 2

Ingredients

  • Left-over chicken, sliced
  • 1 tbsp olive oil
  • 1 onion, finely sliced
  • 1 garlic clove, crushed
  • 1 tbsp of capers, rinsed of their salt or brine
  • 1 tbsp olives, stoned
  • 1 artichoke heart, prepared and sliced into 2 centimetre pieces
  • 2 tbsp single cream
  • 1 ladleful of chicken stock
  • 2 tbsp of a fresh herb such as flat-leaf parsley, chervil or tarragon
  • Salt and freshly ground black pepper
  • Juice of half a lemon
  • Parmesan or pecorino for grating over the top
  • Spaghetti for 2 people

Method: How to make chicken with spaghetti

1. Cook the spaghetti in boiling salted water.

2. Gently fry onion, artichoke and garlic in the olive oil, adding the chicken after a couple of minutes.

3. Once the chicken is hot through, stir in the olives and capers and then the stock, season with salt and pepper.

4. Bring this up to heat and then turn down to simmer to add the cream and lemon juice.

5. Mix in the herbs and add to the cooked pasta, toss and serve with grated cheese.
