Get those little fingers rustling up more than just cornflake cakes with this tasty tortilla recipe. Quick, simple and creative, you can even add some spice

For the chilli

  • 1tbsp olive oil
  • 1 onion, chopped
  • 2 sticks celery
  • 450g lean minced beef
  • 1 can kidney beans, drained and rinsed
  • 2 cans chopped tomatoes
  • 2 tbsp tomato purée
  • 450ml water
  • A handful fresh coriander, washed and chopped
  • 1 generous pinch of mild chilli powder (depending on how daring you want to be with the heat for your children)
  • Salt and pepper

For the side dishes

  • Grated mature cheddar cheese
  • Shredded iceberg lettuce
  • Chopped cucumber
  • Guacamole
  • Salsa (again, choose salsa heat depending on your child’s spice tolerance)
  • Flour tortillas (1 - 2 per child, 2 - 3 per adult)

Method: How to make children's chilli tortillas

1. Heat oil and fry the onion and celery until softened.

2. Add mince and fry for at least 20 minutes or so, until brown and cooked right through.

3. Add the kidney beans and heat through for 5 minutes or so.

4. Add chopped tomatoes, tomato purée, water, coriander, chilli powder and seasoning.

5. Bring to the boil then reduce heat and simmer for at least 40 minutes or so (I like to simmer it for about an hour and a half, keeping your eye on the liquid levels, topping up with water if it seems dry.)

6. Place the tortilla on the plate and add a spoonful of the chilli into the centre.

7. Get the children to pile on the ingredients they like.

8. Wrap the tortillas and cut into manageable pieces.

9. Serve with rice or salad.
