
Give jerky a healthy makeover in this lush salad
1. To make the dressing, place all the ingredients apart from the olive oil and the water in to a blender. Blend the mixture by adding the olive oil very slowly until it emulsifies. Add the water, salt and freshly ground black pepper and blend for a final time.
2. Mix the salad leaves, cucumber, vine ripened tomatoes with the red wine dressing, leaving a little of the dressing.

3. Add the shavings of biltong to the salad and top with sliced red onion. Peel and fan the ripe avocados, place on top of the salad and drizzle with the remaining red wine dressing
