
Use your basic pasta dough to make green pasta with the addition of spinach. Then you can make this wonderful beef canelloni.
Serves 4
less than 30 minutes
1. Wilt 100g baby spinach and squeeze out the liquid. Finely whizz in a processor. Add the basic pasta dough, ingredients an extra 25g flour and mix to a green pasta. Rest, roll out and cut out 8 lasagne sheets. Cook in boiling water, in batches, for 1 minute. Drain. Line each sheet with hot bolognese (made using 500g mince), roll up and put in an ovenproof dish.
2. Top with 300g fresh cheese sauce and 40g grated Parmesan. Bake at 190°C/fan170°C/gas 5 for 25 minutes, until golden. Garnish with fresh oregano.
