
Lentils are a Spanish staple and this recipe is packed with the flavours and colours of the Mediterranean. Strap on your espadrilles and enjoy
Serves 4
1. Mix all the ingredients, apart from the oil, vinegar and anchovies, in a bowl.
2. Separately, mix the oil and vinegar and then add this to the bowl of other ingredients.
3. Season but go easy on the salt - the anchovies and capers will also give salt to the dish.
4. Divide the salad onto four plates and decorate with the anchovies.
