A spiced pasta dish that makes a tasty supper in the Middle East - or in your home

Serves 4 as a main dish or 8 as a side

Ingredients

  • Homemade pasta (see recipe below)
  • 1 cup brown lentils
  • 1 litre of watery meat stock
  • 4 onions, thinly sliced
  • Olive oil
  • Allspice
  • Cinnamon
  • Nutmeg
  • Salt to taste

Method: How to make rashta lentil pasta

1. Make your pasta.

2. Roll out the pasta dough to the thickness of lasagne, dust with flour then roll up gently like a Swiss roll. Cut 5mm slices, crosswise. You'll be left with long strips of pasta that look like tagliatelle.

3. Caramelise the onions in a pan with olive oil. Add the spices and salt.

4. Wash the lentils and cook in the stock until tender. Remove the lentils, but keep the fluid.

5. Add the pasta to the pot containing the lentil water and boil until soft. Drain the fluid then add the lentils and onions. Stir in a little more oil.

6. Leave to 'set' for 5 mins before serving.
