Bunny chow is a deliciously hearty street food snack from South Africa. This scrumptious recipe comes from South African blogger Cook Sister

Ingredients

  • 1kg lamb, cubed
  • 1 medium onion, sliced into rings
  • 2 medium tomatoes
  • 2 tbsp vegetable oil
  • 2-3 curry leaves
  • 1 stick cinnamon
  • 1.5 tsp crushed ginger
  • 1.5 tsp crushed garlic
  • 4 tsp Durban masala (make your own, or substitute shop-bought curry powder - as hot or mild as you like)
  • 1 tsp ground turmeric
  • 2 tsp garam masala
  • 3-4 potatoes, cubed
  • Salt
  • Fresh coriander for garnish

Method: How to make bunny chow

1. Cube the meat and slice the onion; peel and dice the tomato.

2. Heat the oil and add the cinnamon stick, onion and curry leaves. Fry until the onion is light golden brown in colour.

3. Add the masala mix (or curry powder), turmeric, ginger, garlic and tomato. Cook over medium heat, stirring occasionally, until the mix resembles a puree.

4. Add the meat and cook for about 10 minutes. Then add the potatoes and about 1/4 cup of water.

5. Lower the heat and simmer over the low heat until the meat is tender and the potatoes cooked. Keep an eye on it to make sure the bottom of the pot does not burn.

Tip:

To make your own simplified version of Durban masala, try: 3 tbsp store-bought curry powder, 3 tbsp hot chilli powder, 1 tsp cayenne pepper, 1 tsp garlic powder, 1 tsp ginger powder

6. When the meat and potatoes have cooked, add the garam masala mixture. Test for seasoning and add salt if necessary. Simmer for a further 10 minutes on a low heat.

7. Take a fresh loaf of white bread and halve it. Scoop out the soft white crumb, leaving the crust to form a 'bowl'. Spoon the curry into the half loaf and serve, garnished with coriander leaves. The soft crumb can be dipped into the curry and eaten as well.

  1. Lekker food Cook sister, we used to make bunnys in our cafe in Uvongo, found that people loved all meats, with beef and mutton being favourite. I loved chicken myself. Taught how to make a curry by an Indian girl who worked in the Spar liquor store next door.
