The shami kebab has many variants and is eaten all over the sub continent. It has no strict ingredient list and works well using chicken or beef. This recipe came from Indian restaurant Lasan
Serves 4
1. Mix all the ingredients together and leave to marinate for two hours.
2. Form the mixture into patties.
The kebabs are best cooked on a grill then finished off in the oven for a few minutes.
3. Brush a griddle pan or gill with cold pressed rapeseed oil and cook the patties over a moderate heat for 5 minutes on each side.
