Nutmeg and mace come from the same plant. Nutmeg is the seed and the mace is the outer covering or lacy network around the seed. Mace is expensive and very hard, therefore difficult to grind. It is an essential ingredient in the garam masala spice mix or can be used whole to flavour certain meat curries and pilaus.
Mace has a slightly sweet aroma, but it needs to be ground just before use, as it loses its fine quality if not used quickly.
