Predominantly used in South Indian cooking, often in association with coconut. Curry leaves are again used fresh to impart a warm, appetising aroma. Curry leaves are also used in the tempering process to flavour South Indian curries.
Curry leaves are dried and ground to be used in Madras curry powder.
