Cumin seeds and ground cumin are, again, widely used in North Indian cooking. Cumin seeds are used in a process called 'tempering' of curries and lentils. In this process, cumin seeds are put in hot oil and then poured over a curry or lentil at the last stage of the cooking process.
Ground cumin is again used in various spice mixes. It is also roasted and ground to give it a very distinctive aroma and is used in yoghurt dishes like raita or salted lassis.
