Yogesh Datta, chef and co-founder of acclaimed Indian restaurants the Painted Heron and Bangalore Express, talks us through the key ingredients you'll need to cook authentic Indian food.
Coriander
Used fresh as leaves, whole as seeds or in powder to form the base of curry powder. One of the most widely used spices in Indian cooking. Fresh coriander leaves are used as a garnish very much like parsley in Middle Eastern cooking. Fresh coriander is minced to make chutneys and dips.
The dry whole seeds are used as a whole spice or powdered to put in various spice mixes.
