
Although mixed fruit clafoutis with berry sauce looks like a French pastry, it isn't. It's more like a fabulous, fat and fluffy French pancake. You pour the batter over the fruit and while it bakes everything puffs up and browns. It's like magic - but less boring and rather tastier than card tricks.

1. Sit the unopened bag of frozen fruits in a sink filled with warm water for 5-10 minutes, to thaw. Open and tip the fruit into a sieve resting over a bowl, to catch the juice. Set aside to drain completely.
2. Meanwhile, preheat the oven to 180°C/fan160°C/gas 4. Lightly brush a 1.5-litre medium-deep baking dish with a little vegetable oil.
3. Make the batter. Sift the flour with a pinch of salt into a bowl. Stir in 4 tablespoons of the sugar, make a well in the centre and pour in the eggs. Gradually add the milk, mixing as you go, until you have a smooth, thin batter. Tip the fruit into the baking dish (reserve the juice) and spread in a single layer. Pour over the batter and bake for 50 minutes, until the batter is risen, cooked through in the centre and pale golden.
4. While the clafoutis is cooking, make the berry sauce. Put the drained juice from the fruit in a saucepan, along with the remaining sugar. Place over a low heat, stir to dissolve the sugar, then bring to the boil and bubble until reduced and syrupy. Serve drizzled over the clafoutis.
