A Chinese classic, prawn toasts are often considered beyond the capabilities of the humble home cook. Nonsense, says Lucy Mitchell from oriental food supplier Sea Woo. Try her recipe for sesame prawn toasts and surprise yourself.

Makes 6 – 8 slices

Ingredients

  • 230g Minced pork
  • 230g Prawns
  • Sliced bread
  • A few drops of sesame oil
  • 100g of sesame seeds
  • 1 tsp starch
  • Good pinch of salt
  • 1 litre vegetable oil for deep frying

Method: How to make sesame prawn toasts

1. Mince the prawns then mix them with the pork and sesame oil.

2. Spread the sesame seeds evenly on a large plate, spread the prawn paste thickly on one side of each slice of bread, then place, spread side down on the surface of the sesame seeds, pressing gently so each slice has a good coating.

3. Heat the oil in a wok or deep fryer, on a moderate heat. Deep fry the toast spread side down for about 3 – 4 minutes or until golden brown. Drain excess oil on absorbent paper and serve.

  1. On the show he did not use the pork; as I recall he minced the prawns in a food processor then added the oil and the starch (like corn flour mentioned earlier) to the processor and mixed it. I don't remember him using pork at all.

  3. ^ I mixed it in with the prawns to thicken the paste. Used corn flour for starch.
