Like lots of dim sum recipes these stuffed mushrooms are cooked to perfection in a bamboo steamer, which can be picked up from most Chinese supermarkets. Try placing your ingredients on top of a green leaf to prevent them sticking to the steamer. Banana leaves look pretty but a humble lettuce leaf will work just as well.
