You can't have roast beef without Yorkshire puddings, and the good news is they're dead easy to make at home.

Makes 4-6
Takes 15 minutes to make and 20-25 minutes in the oven

Ingredients

  • 20g beef dripping or 2 tbsp vegetable oil
  • 100ml full-fat milk
  • 50ml sparkling water
  • 115g plain flour
  • 1/4 tsp salt
  • 2 medium eggs, beaten

Method: How to make Yorkshire puddings

1. Preheat the oven to220°C/fan200°C/gas 7. Put the dripping or oil into the holes of a 4-hole Yorkshire pudding tin or deep, 6-hole muffin tin and place in the oven for 5 minutes or until the fat or oil is really hot and smoking.

2. Meanwhile, mix the milk and sparkling water in a jug. Sift the flour and salt into a large bowl. Season the eggs with black pepper. Make a well in the centre of the flour, pour in the eggs and whisk, drawing in the flour as you go. Gradually whisk in the milk mixture, until you have a smooth batter.

3. Transfer the batter to a jug. Pour into the hot tin, filling each hole no more than three-quarters full. Cook, without opening the oven door, for 20-25 minutes or until risen, deep golden and crisp. Serve hot.

  2. Totally amazed!! Can not believe now good these Yorkies turned out! I had to use still water and I completely followed the recipe steps wrong even to the extent of breaking my whisk in the process. They came out crispy on both sides and edible. GREAT!!!

  3. The recipes are great but take some added work as we do not use the metric system here so I have to convert everything.

  5. Fellow compatriots! Stop whining about not knowing the metric system. Just type what it is you need converting - ml to ounces, 220C to F, etc... into Google and it will convert it for you. As for the Gas mark...google conversion tables for it. They are there. Attn iPhone users, the iPhone has a great little app for converting. It's called Units.

  7. Anyone know an easy way to switch measurements to American? Our ovens just do F*, not the 220*C/fan200*/gas7 --- what the heck does all that mean? I just watched episode of killing the turkeys. City girl me just about lost it. I guess it would have been easier if they didn't have names.

  9. I first made these three weeks ago. That was my first ever yorkshire pudding effort. They were spectacular. Exactly as I hoped they would turn out. I'd never made them before because my mum's were always out of this world and I just thought I would make a pigs ear of it. I've made them three weeks running now and they're still coming out superb. Nothing like watching your own yorkshires rising in the oven! Cheers.
