Bored of beans? Get game on with this indulgently flash dish

Serves 4

Ingredients

  • 4 snipes, skinned and gutted
  • 8 slices of Parma ham
  • 100g butter
  • 4 slices of bread
  • Cream
  • Salt and pepper

Method: How to make snipe on toast

1. Preheat the oven to 200°C / gas mark 6.

2. Remove the wings and the lower section of the leg (crack the bone, twist and pull to remove the sinews).

3. Wrap each bird in 2 slices of Parma ham to enclose the legs. Secure with a cocktail stick. Brush with butter and roast in the oven for approximately 15 minutes, then lower the heat to 180°C/ gas mark 4, and cook for a further 10-15 minutes.

4. Butter the bread and grill or fry until crisp.

5. Remove the breast and leg meat from the bird. Chop the ham and arrange all the meat on top of the fried bread.

6. Brush with melted butter or cream, season with salt and pepper and serve.
