Throw wind to the caution with this classic British pub dish. Expect to pile on the calories and, if you really want to keep up with tradition, then wash it down with a beer for a most satisfactory meal.

Ingredients

  • 2 tbsp vegetable oil
  • 1 onion, finely chopped
  • 1 large carrot, diced
  • 500g lean beef mince
  • 1 tbsp tomato purée
  • 300ml beef stock, hot
  • 11/2 tbsp Worcestershire sauce
  • Few fresh thyme leaves
  • For the Cheddar and parsnip mash
  • 350g floury potatoes
  • 350g parsnips
  • 3 tbsp semi-skimmed milk
  • 1/4 tsp freshly grated nutmeg
  • 50g extra-mature Cheddar, roughly grated

Method: How to make cottage pie with mash

1. Heat the oil in a large pan over a medium heat. Add the onion and carrot and cook, stirring, for 5 minutes. Add the mince, turn up the heat and cook for 5 minutes, stirring until browned. Add the tomato purée, cook for 1 minute, then pour in the stock, Worcestershire sauce and thyme. Bring to the boil, then cover and reduce to a simmer for 20 minutes. Uncover and cook for 5-10 minutes, until most of the liquid is absorbed. Season, then spoon into a 2-2.5-litre ovenproof dish.

2. For the mash, cut the potatoes and parsnips into medium-size chunks and put into a large pan of cold salted water. Bring to the boil and simmer for 15 minutes, or until tender. Drain and return to the pan to heat for 30 seconds to drive off the excess moisture. Mash with the milk and nutmeg. Season and set aside.

Preheat the oven to 180C/fan160C/gas 4.

3. Spoon the mash onto the mince. Rough up with a fork and sprinkle with the cheese. Bake for 25 minutes, until the mash is golden and crisp in places.

  2. I have made it today and it was delicious. A little tip: I wouldn't add so much parsnip as it kills the taste of potatoes. But otherwise it was very tasty

  8. Cottage pie and Shepherd's pie are not the same thing. Cottage pie uses minced beef, shepherd's pieuses minced lamb or, more correctly, minced mutton.

  10. Shepard's Pie; Ingredients 1. Mince meat 2. Vegetables: Frozen/fresh (ie, peas,sweetcorn,carrots ect.) 3. Potatoes ( utensils: ovenproof dish, potatoe masher,) Method. 1. Boil the vegetables & potatoes, 2. cook the mince 3. Mix the mince and vegetables together and add a beef stock-cube, then add a little water. 4. preheat the oven to gas mark 4 5. use your potatoe masher to mash up the potatoes 6. carefully put in thee mince/vegetable mix into the ovenproof dish, then spoon on the mashed potatoes on top then flatten down the mashed potatoes with knife or fork. 7. sprinkle a little olive or vegetable oil onto the mashed potatoes ( not too much!) then put it in the oven 8. wait until the top of the mashed potatoes has gone a little bit brown. THE END!! I really hope this recipe goes well for all of you who wish to use this, a little bit of advice from me is always check other recipes because my recipe could always be perfected! have fun makng this.   11. Yummy! Made a double portion and froze the second one before putting in oven. A week later took the frozen pie all the way to Scotland and finished it off in oven, sure it was yummier after the 8 the journey!

  13. Hi there, Tried this recipe and LOVED it! . It looks like a lof of ingredients to begin with, but really it's just things that you would normally have around the house. This was just about as traditional as it can get. I did change just one thing a bit for my own taste i just had 150 ml of Beef stock and 150 ml of red wine (the acidity is a perfect balance this way) and it cuts down on salt in the stock. Mind you, this is just my take on it. I am sure it is FAB without it. Thank you for this lovely Brittish recipe.

  22. hey im from rotherham myself and think its great what your doing, i've seen the website advertised thought i'd have a look theres some great recipes and will be trying some of them but i have noticed you need quite alot of ingredients and thinking its going to cost a bit of money, i no you dont have to put them all in but just bare it in mind.
