
Vito showed the Italians how to do chicken the English way with this chicken and cream recipe from Dolce Vito: Dream Restaurant
1. In a frying pan heat up a little olive oil. Slice the chicken breast in half and place into pan. Seal the chicken on both sides.
2. Add the diced onion and garlic and cook for 2 minutes. Add the sliced mushrooms and a little salt and pepper – cook for one more minute. Add the white wine and reduce by half. Add the cream.
3. Turn the chicken over, reduce the sauce until it coats the back of a spoon and the chicken is cooked. Serve on a plate with chicken crossed over then cover with the sauce.
