
This tasty tapas recipe from Tapas Brindisa is simple, speedy and tastes delicious
Serves 4
1. Mix the beans with the bay leaf and thyme in a saucepan. Cover with cold water and bring rapidly to the boil on a high heat. Once bubbling, reduce the heat and leave to simmer for approximately one hour. Then let them cool in the saucepan in their liquid.
2. In another saucepan, heat the oil and add the garlic and onion and fry lightly until golden.
3. Add the tomato and pepper and leave to cook over a low heat for five minutes, before adding the wine and saffron. Leave to reduce.
4. Once the wine has evaporated, add the clams, the drained beans and the fish stock. As soon as the clams open, serve immediately. Season to taste and garnish with the chopped parsley.
