
Italian estate agent John Santamaria invited his Come Dine With Me guests to try some authentic tiramisu and the results speak for themselves
1. Beat the egg yolks with the sugar, and mix with the mascarpone cream and the zest.
2. Beat the egg whites until they form stiff peaks like snow (you should be able to put the bowl over your head and not get wet!). Slowly incorporate the mascarpone mixture.
3. Fill a deep dish with the espresso coffee and add a generous helping of Amaretto. Place some sponge fingers (enough to cover the base of the dish in which you are going to make the tiramisu) into the espresso mixture and allow them to soak it up for a few seconds (don’t allow the biscuits to get so sodden that they collapse).
4. Transfer the sponges into your tiramisu dish then cover with a layer of mascarpone mixture, and cover that with a good sprinkling of chocolate powder. Repeat until you run out of ingredients or room!
5. Refrigerate for at least 5 hours.
