
Start the meal off with a tangy grapefruit flourish
1. Loosen the fruit from the skin and remove, leaving the empty grapefruit shells intact. Scallop the edges of the shells. Remove the pith from the fruit and chop and place in a bowl with the juice.
2. Add all the other ingredients with pepper to taste and mix well, then put in to the fridge until required. Just before serving pile the mixture into the shells.
