Nikki started with a simple sweet peppers filled with sun-dried tomatoes and mozzarella recipe. Find out what else went on in Come Dine With Me Birmingham

Serves 6

Ingredients

  • 3 red or yellow peppers, halved and deseeded
  • 12 sun-blush tomatoes quarters in oil, drained
  • 300g mozzarella cheese, drained and cut into small pieces
  • 50g grated English cheddar
  • 8 fresh basil leaves, roughly shredded

Method: How to make sweet peppers filled with sun-dried tomatoes and mozzarella

1. Place the peppers on a foil-lined grill pan, cut side up. Toss the tomatoes and mozzarella cheese together and divide amongst the peppers.

2. Toss the cheddar and basil together and sprinkle on top. Cook under a preheated medium grill until the cheese melts and begins to brown and the peppers are hot.
