
This Italian treat is the centrepiece of Linda's meal. She mixes some fantastic organic veg with perhaps the most famous pasta variety to good effect.
1. Chop the onions and tomatoes and fry lightly. Add half a jar of passatta and simmer. Meanwhile, fry the peppers and courgettes then add the tomato sauce. Finally add some part boiled spring broccoli. Cook for a further 15 minutes and then serve with spaghetti.
