Desserts with an alcoholic kick are always a dinner party hit, as demonstrated by Yvette Fielding and her Pimm’s infused pudding on Celebrity Come Dine With Me

Serves 4

Ingredients

  • 1 tbsp caster sugar
  • Finely grated zest 2 well washed oranges
  • 3 tbsp Pimms No 1
  • 300ml double cream
  • 100g meringues, broken into chunky pieces
  • 450g fresh strawberries, hulled and quartered
  • Mint leaves, to decorate
  • 1 tsp icing sugar, sifted

Method: How to make Vicar’s secret

1. Put the sugar in a large bowl and stir in the orange zest and Pimms until the sugar dissolves. Add the cream and whisk with electric beaters until soft peaks form.

2. Stir half the meringue pieces into the cream mixture. Put half the strawberries into a bowl and press with the back of a fork to release their juice without crushing completely. Stir gently into the cream mixture.

3. Spoon the strawberry and cream mixture into a glass serving dish. Top with the remaining meringue. Scatter with the rest of the strawberries. Chill for 30 minutes.

4. Decorate with mint leaves and sifted icing sugar to serve.

  1. I just made this for 8 people - the zest of 4 oranges is far too much! I'd suggest halving that suggested by the recipe. I added two strong mints (the chalky type) to each helping in the top of the cream layer - it certainly gives the guests an additional treat!

  2. This is a variation of Eton Mess - but I had another kind of mess due to: Problems with whipping to soft peaks - maybe because my hand slipped with the Pimms.,.... Also advise a very large bowl to prevent splash around. Although resultant pud was runnier than it should have been still tasted good.
