
Mike Robinson adds a spicy kick to his evening’s proceedings with his authentic Jamaican chicken soup recipe on Come Dine With Me Milton Keynes
1. Put the chicken carcass in a saucepan with the carrots and cover with 2 litres of water. Bring to the boil and cook for 40 minutes. Drain in a colander then pour the stock through a fine sieve into a clean pan.
2. Add the remaining vegetables, pepper, thyme and salt. Bring to a simmer and cook for 15-20 minutes until the vegetables are tender. Adjust seasoning to taste.
3. Ladle into warmed bowls and sprinkle with chopped parsley to serve.
Please note: Scotch bonnet peppers are extremely hot. Wash hands well after preparation and keep away from eyes.
