Introducing a Mexican theme to her dinner party, Clare Baron kicks off the festivities with a traditional shrimp ceviche on Come Dine With Me York

Serves 4

Ingredients

  • 650g large cooked peeled prawns
  • 1 avocado, peeled, halved, stoned and chopped
  • ½ cucumber, finely diced
  • ½ red onion, peeled and diced
  • 1 plump red chilli, deseeded and diced
  • Freshly squeezed juice 2 limes
  • Freshly squeezed juice 1 lemon
  • 1 tbsp finely chopped garlic
  • 1 tbsp ketchup
  • Tabasco (optional)
  • Lime wedges and soured cream, to serve

Method: How to make shrimp ceviche

1. Cut the prawns in half and put in a large bowl with the avocado, cucumber and onion. Mix the chilli, lime and lemon juice, garlic, ketchup and a few drops of Tabasco, if using.

2. Pour over the prawn mixture, cover and chill for 5 hours, stirring occasionally. Serve with lime wedges and soured cream if liked.
